Native to Mexico, Central America, and Colombia, dahlias are bushy, herbaceous annual plants with bright flowers in a variety of colors. In Europe and America, prior to the discovery of insulin in 1923, diabetics were often given a substance called Atlantic starch to help control their blood sugar, which was extracted from dahlia tubers.
